Chipotle Citrus Tofu Tacos
- 1 zucchini - diced
- 1 red onion minced
- 1 block CinSoy Tofu - cubed
- 3 cloves garlic - grated
- 2 tbsp chipotle (adjust if you don't love heat!)
- 1 lime juice
- 1/2 orange juiced
- 2 tbsp CinSoy Soy Sauce
- 1/2 tsp cumin
- 1/2 tsp oregano
- Tortillas, avocado, lime and cilantro to serve!
- Saute onion and zucchini in a pan for 2-3 minutes. Add in the cubed tofu and cook until it starts to brown on one side.
- Stir together the seasoning sauce - citrus, chipotle, garlic, soy sauce and spices.
- Pour the seasoning over the tofu and veggies. Toss in the pan and allow the sauce to coat and absorb into the tofu.
- Char some corn tortillas over the flame and fill with the taco filling. Top with avocado and cilantro. Enjoy!
