Citrus Soy Roast Chicken
- 1 cup citrus juice (mix of lemon, lime and orange)
- 1/2 cup CinSoy Soy Sauce
- 1 stalk of lemongrass - smashed to release flavor
- 2 tbsp honey or sugar
- 2 tbsp fresh ginger (coarsely chopped)
- 3 cloves garlic (chopped)
- 2 1/2 pounds chicken (quarters or bone in pieces)
Topping:
- 1/2 bunch cilantro (chopped)
- 1/4 cup roasted peanuts (chopped)
- 1 small shallot (minced)
- Zest of 1/2 lemon
- Zest of 1/2 orange
- Mix the first six ingredients in a jar. Pour the marinade over the chicken and let sit in fridge overnight.
- Remove the chicken from the fridge and dry thoroughly.
- Place on a rack with foil lined sheet tray. Bake at 400 degrees for 30-45 or until the internal chicken temperature reaches 165 degrees.
- In a bowl, mix the topping ingredients together.
- Place the chicken on a platter and sprinkle peanut mixture over the top. Enjoy!
