Crunchy Jicama Salad with Soy Honey Vinaigrette

 

Salad:

  • 1 small jicama - shaved or julienned
  • 1 cucumber - shaved or julienned
  • 1/2 thinly sliced jalapeño 
  • 1/4 julienne red onion
  • 1/4 bunch cilantro - chopped
  • 1/4 cup peanuts

Vinaigrette:

  • 1 tbsp CinSoy Soy Sauce
  • 1 tbsp Honey
  • 1 tbsp Rice Vinegar
  • Juice of 1/2 small lemon 
  • 2 tbsp Olive Oil 
  1. Prepare all of the vegetables - the jicama and cucumber will work best julienned or peeled with a vegetable peeler. Add them to a bowl with the peanuts. 
  2. Add the vinaigrette ingredients to a mason jar. Shake to emulsify and adjust seasoning to your preference. 
  3. Dress salad and serve!
