Crunchy Jicama Salad with Soy Honey Vinaigrette
Salad:
- 1 small jicama - shaved or julienned
- 1 cucumber - shaved or julienned
- 1/2 thinly sliced jalapeño
- 1/4 julienne red onion
- 1/4 bunch cilantro - chopped
- 1/4 cup peanuts
Vinaigrette:
- 1 tbsp CinSoy Soy Sauce
- 1 tbsp Honey
- 1 tbsp Rice Vinegar
- Juice of 1/2 small lemon
- 2 tbsp Olive Oil
- Prepare all of the vegetables - the jicama and cucumber will work best julienned or peeled with a vegetable peeler. Add them to a bowl with the peanuts.
- Add the vinaigrette ingredients to a mason jar. Shake to emulsify and adjust seasoning to your preference.
- Dress salad and serve!
