Gamja Jorim - Korean Soy Braised Potatoes
- 1.5 pounds yellow potatoes
- 1 carrot
- 2 jalapeños
- 1 small red bell pepper
- 1/2 small yellow onion
- 1 tbsp oil
Sauce:
- 3 1/2 tbsp CinSoy Soy Sauce
- 2 tbsp sugar
- 1 tbsp mirin
- 4 cloves minced garlic
- 3/4 cup water
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
- Peel and cut up the potatoes and carrots into bite sized chunks. Cut the onions, peppers and jalapeños into similar sized pieces.
- Add the potatoes to a hot pan with the oil. Sauté for 5-7 minutes, stirring a few times to make sure they don't stick.
- Mix the sauce ingredients (minus the sesame oil and seeds) in a bowl and stir to dissolve the sugar.
- Add the carrots and sauce to the pan and stir to mix. Cook over medium heat for about 5 minutes.
- Add in the jalapeños, onions and bell pepper.
- Cook, stirring occasionally, until the vegetables are tender and the liquid has thickened into a glossy sauce.
- Stir in the sesame oil and sesame seeds and serve.
