Grilled Balsamic Tofu with Lemon Miso Greek salad
- 1 block of CinSoy Tofu
- 2 tbsp balsamic vinegar
- 1 tbsp Apple Cider vinegar
- 1 tbsp whole grain mustard
- 2 tbsp CinSoy Soy Sauce or Tamari
- 1 tsp oregano
- 1 tsp Italian herbs
- 3 cloves garlic - grated
- 1/4 cup olive oil
- 1 small lemon (zest and juice)
- 1 clove garlic
- 1/2 tbsp CinSoy Miso
- 1 tbsp red wine vinegar
- 1/4 cup olive oil
- Black pepper
- Drain and slice your tofu into thick slices. Mix the marinade ingredients together.
- Marinate the tofu for 1 hour on the counter or a few hours in the fridge.
- Whisk the vinaigrette ingredients together in a bowl until smooth.
- Remove tofu from the marinade and sear in a pan or a grill pan.
- Serve over a salad of cucumber, tomatoes, red onion and olives. Add greens if you would like.
- Drizzle with the Lemon Miso Vinaigrette and crumbles of feta cheese.
