Herb Soy Mushroom Gravy
- 8 ounces mushrooms sliced
- 2 shallots minced
- 4 cloves garlic minced
- 1 tbsp each finely chopped sage and thyme
- 1/2 tbsp finely chopped rosemary
- 1/2 cup olive oil
- 1/2 cup flour
- 1 tbsp CinSoy Soy Sauce
- 1 quart vegetable stock
- Cook onions and mushrooms in olive oil until browned and tender.
- Add in garlic and herbs and cook for about 1 minute more.
- Sprinkle in flour and stir until a paste forms.
- Cook for about 5 minutes on low.
- Slowly start adding in your stock, stirring well with each addition.
- Simmer the sauce for a few minutes and season with soy sauce to taste, starting at about a tablespoon.
- Spoon over mashed potatoes, our Crispy Savory Tofu or anything else that sounds good!
