Loaded Sweet Potato with Tamari Tahini Sauce
- 2 sweet potatoes
- 1 can chickpeas, drained
- 1 small red bell pepper, diced
- 1/2 onion, diced
- 2 tbsp CinSoy Chili Crisp
- 1/2 cup greens of choice (kale or collards are great)
Tamari Tahini Sauce
- 2 tbsp tahini
- 1 1/2 tbsp CinSoy Tamari
- 1 clove garlic, grated
- 1/2 tsp honey
- Black pepper to taste
- Bake your sweet potatoes until soft.
- In a hot pan, sauté the onions and bell pepper until soft. Add in the chickpeas, greens and chili crisp. Cook for a few minutes and season to preference.
- Mix the tahini sauce ingredients together in a bowl. Add 1 tbsp of water and add in more until you get to a creamy consistency.
- Stuff the chickpea mixture into the sweet potato and drizzle with the sauce. Add a drizzle more of chili crisp on top. Enjoy!
