Loaded Sweet Potato with Tamari Tahini Sauce

  • 2 sweet potatoes
  • 1 can chickpeas, drained 
  • 1 small red bell pepper, diced 
  • 1/2 onion, diced
  • 2 tbsp CinSoy Chili Crisp
  • 1/2 cup greens of choice (kale or collards are great)

 

Tamari Tahini Sauce

  • 2 tbsp tahini
  • 1 1/2 tbsp CinSoy Tamari
  • 1 clove garlic, grated
  • 1/2 tsp honey 
  • Black pepper to taste

 

  1. Bake your sweet potatoes until soft. 
  2. In a hot pan, sauté the onions and bell pepper until soft. Add in the chickpeas, greens and chili crisp. Cook for a few minutes and season to preference. 
  3. Mix the tahini sauce ingredients together in a bowl. Add 1 tbsp of water and add in more until you get to a creamy consistency. 
  4. Stuff the chickpea mixture into the sweet potato and drizzle with the sauce. Add a drizzle more of chili crisp on top. Enjoy!
