MIso and Roasted Garlic Caesar Dressing


  • 3 anchovies
  • 5 cloves roasted garlic
  • 1 clove fresh garlic
  • 1 egg yolk
  • 1 1/2 tbsp CinSoy Miso 
  • 1 tbsp whole grain mustard
  • 1/2 lemon (zest and juice)
  • 2 ounces parmesan cheese 
  • Black pepper (to preference)
  • 1/3 cup oil (use oil from roasted garlic if you have it!)

  1. Mash the anchovies and roasted garlic into a rough paste.
  2. Add them to a bowl with the egg yolk, miso paste, mustard lemon and grated fresh garlic and black pepper. Whisk to combine.
  3. Slowly drizzle in the oil while whisking to emulsify.
  4. Add parmesan and season to taste with more black pepper or lemon.
  5. Use as the dressing for a traditional or non-traditional Caesar salad. Try using kale, shaved celery and shallots and crunchy croutons.
