Miso Lemon Poached Cod
- 2 cod filets
- 3 scallions or small handful of chives
- 1 1/2 cup water
- 1 inch ginger
- 3 cloves smashed garlic
- 2 tbsp CinSoy Miso
- 1 wedge lemon plus slices
- Chives and micro greens
- Simmer scallions or chives, ginger, garlic and water for 10 minutes.
- Remove solids. Stir in miso.
- Add cod and cover with lid. Poach at a simmer for about 5-7 minutes (more if your filets are thicker).
- Remove the cod from the liquid and let rest. Squeeze the lemon into the broth, taste and add a splash of soy sauce if needed.
- Serve fish in a shallow bowl with a bit of the broth. Top with a generous handful of chives and some micro cilantro or chervil.
