Miso Mac and Cheese


  • 1/2 pound pasta (macaroni or short noodle of choice)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cup whole milk or half and half
  • 1 cup shredded cheese (we use half white cheddar and half gruyere)
  • 3 tbsp CinSoy Miso
  • Salt and fresh ground pepper to taste - be generous with the pepper!
  1. Cook pasta to package directions. Drain and set aside. 
  2. In a saucepan, melt the butter. 
  3. Add in the flour and whisk to combine. Cook, stirring often, for about 2 minutes over low heat to cook out the flour. 
  4. Slowly whisk in the milk to avoid lumps. Bring mixture up to a boil and reduce heat to a low simmer. Cook until you see the mixture start to thicken.
  5. Add in miso and whisk to combine well. Slowly add in the cheese. 
  6. Taste and add the seasoning to your preference. 
  7. Add the pasta and gently stir to coat. Enjoy!
