Miso Maple Mushroom Jam

Miso Maple Mushroom Jam 
  • 1 pound mushrooms - thinly sliced
  • 1 yellow onion - julienned
  • 3 cloves garlic - minced
  • Black pepper to taste
  • Pinch of chili flakes
  • 1.5 tbsp CinSoy Small Batch Miso
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  1. Sauté onions in oil until caramelized.
  2. Add mushrooms and cook until browned and tender.
  3. Add garlic, black pepper and chili flakes and cook until fragrant.
  4. Add miso, maple syrup and balsamic vinegar with a splash of water. Mix and then allow to simmer on low heat until thick and syrupy.
  5. Taste and adjust seasoning to your liking.
