Miso Pumpkin Muffins
- 1 egg
- 15 oz pumpkin
- 1 tsp vanilla extract
- 1 1/4 c brown sugar
- 1/2 c melted butter
- 1/4 c milk
- 2 1/2 tbsp CinSoy Miso
- 1 3/4 c flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 tsp of pumpkin pie spice - use the ratio you like of cinnamon, nutmeg, allspice and ginger
- Pepitas, Brown Sugar and CinSoy Soy Sauce Salt for topping

In a large bowl - whisk together the egg, vanilla, sugar, pumpkin, CinSoy Miso, milk and butter until smooth.

Add the dry ingredients and stir until combined.

Pour into a lined cupcake pan - makes about 18 cupcakes. Sprinkle with pepitas, brown sugar and CinSoy Soy Sauce Salt.
- Bake at 350 degrees for 15-18 minutes or until a toothpick comes out clean.
