Miso Pumpkin Muffins

  • 1 egg
  • 15 oz pumpkin
  • 1 tsp vanilla extract
  • 1 1/4 c brown sugar
  • 1/2 c melted butter
  • 1/4 c milk
  • 2 1/2  tbsp CinSoy Miso 
  • 1 3/4 c flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 tsp of pumpkin pie spice - use the ratio you like of cinnamon, nutmeg, allspice and ginger 
  • Pepitas, Brown Sugar and CinSoy Soy Sauce Salt for topping
  1. In a large bowl - whisk together the egg, vanilla, sugar, pumpkin, CinSoy Miso, milk and butter until smooth.

  2. Add the dry ingredients and stir until combined.

  3. Pour into a lined cupcake pan - makes about 18 cupcakes. Sprinkle with pepitas, brown sugar and CinSoy Soy Sauce Salt.  

  4. Bake at 350 degrees for 15-18 minutes or until a toothpick comes out clean.
