Miso Shallot Grilled Cheese
- 1 tbsp butter
- 1 tbsp CinSoy Miso
- 1 shallot
- 1 head garlic
- Pinch of chili flakes and black pepper
- Cheese of your choice - we went with cheddar and parm but the options are endless!
- 4 slices of Sourdough bread
- Mayo and Butter for cooking
- Peel the shallot and cut into quarters. Cut the top off of the head of garlic to expose the cloves.
- Wrap the shallot and garlic in foil and drizzle with a generous pour of olive oil. Place on a baking sheet and bake at 350 degrees for 1 hour or until they are very tender.
- In a mixing bowl - squeeze out the garlic cloves and add the shallot. Mash with a fork as best as you can. Mix the softened butter with CinSoy Miso and garlic mixture. Add a sprinkle of pepper and chili flakes if you want.
- Spread the mixture on the inside of your bread and cover with the cheese.
- Spread mayo on the outside of the bread and melt a tablespoon of butter in the pan.
- Cook over medium heat until golden brown on both sides and the cheese is melted inside. Enjoy!
