Miso Shallot Grilled Cheese 


  • 1 tbsp butter
  • 1 tbsp CinSoy Miso
  • 1 shallot
  • 1 head garlic
  • Pinch of chili flakes and black pepper 
  • Cheese of your choice - we went with cheddar and parm but the options are endless!
  • 4 slices of Sourdough bread
  • Mayo and Butter for cooking

  1. Peel the shallot and cut into quarters. Cut the top off of the head of garlic to expose the cloves.
  2. Wrap the shallot and garlic in foil and drizzle with a generous pour of olive oil. Place on a baking sheet and bake at 350 degrees for 1 hour or until they are very tender. 
  3. In a mixing bowl - squeeze out the garlic cloves and add the shallot. Mash with a fork as best as you can. Mix the softened butter with CinSoy Miso and garlic mixture. Add a sprinkle of pepper and chili flakes if you want.
  4. Spread the mixture on the inside of your bread and cover with the cheese.
  5. Spread mayo on the outside of the bread and melt a tablespoon of butter in the pan.
  6. Cook over medium heat until golden brown on both sides and the cheese is melted inside. Enjoy!
