Miso Smashed Red Potatoes

 

  • 1 1/2 pounds red potatoes
  • 3 tbsp unsalted butter
  • 2 tbsp CinSoy Miso
  • 1/4 cup milk or cream
  • 2 garlic cloves
  • Black Pepper
  • Parsley, chives or herb of choice
  1. Boil potatoes until fork tender - about 15 minutes. Drain the potatoes and set aside.
  2. Melt your butter and milk in the same pot. Grate in 2 garlic cloves.  When warmed and melted - add in miso and stir to combine.
  3. Add potatoes and mash roughly with a potato masher or flat ladle.
  4. Season with salt and fresh black pepper to taste. Add in herbs - scallion, parsley, chives at the end.
