Miso Smashed Red Potatoes
- 1 1/2 pounds red potatoes
- 3 tbsp unsalted butter
- 2 tbsp CinSoy Miso
- 1/4 cup milk or cream
- 2 garlic cloves
- Black Pepper
- Parsley, chives or herb of choice
- Boil potatoes until fork tender - about 15 minutes. Drain the potatoes and set aside.
- Melt your butter and milk in the same pot. Grate in 2 garlic cloves. When warmed and melted - add in miso and stir to combine.
- Add potatoes and mash roughly with a potato masher or flat ladle.
- Season with salt and fresh black pepper to taste. Add in herbs - scallion, parsley, chives at the end.
