Pineapple Soy Chicken
- 3/4 cup pineapple juice
- 1/3 cup CinSoy soy sauce
- 1/4 cup brown sugar
- 1/4 cup honey
- 4 cloves garlic
- 1 inch ginger, minced
- 1 tbsp chili flakes or chili powder
- 4 chicken thighs (bone in)
- Mix the marinade ingredients in a bowl and stir to combine.
- Pour over chicken and refrigerate overnight.
- Heat oven to 400 degrees.
- Remove chicken from marinade and place skin side up in a baking dish or pan.
- Bake until internal temperature reaches 165 degrees.
- Serve topped with pineapple salsa or over grilled pieces of pineapple.
