Pineapple Soy Chicken

 

  • 3/4 cup pineapple juice
  • 1/3 cup CinSoy soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 4 cloves garlic
  • 1 inch ginger, minced
  • 1 tbsp chili flakes or chili powder 
  • 4 chicken thighs (bone in)
  1. Mix the marinade ingredients in a bowl and stir to combine.
  2. Pour over chicken and refrigerate overnight. 
  3. Heat oven to 400 degrees. 
  4. Remove chicken from marinade and place skin side up in a baking dish or pan. 
  5. Bake until internal temperature reaches 165 degrees. 
  6. Serve topped with pineapple salsa or over grilled pieces of pineapple.
