Roast Chicken with Miso Sesame Glaze and Charred Cabbage
- 3 pounds chicken thighs and drums (bone in skin on)
- 2 medium shallots (small diced)
- 4 cloves of garlic
- 2.5 tbsp CinSoy Miso
- 2 tbsp sesame oil
- 1 tbsp honey
- 1 head cabbage
- 2 red onions
- 2 lemons
- Salt and pepper your chicken and allow to come to room temperature.
- Slice cabbage and red onions onto wedges and arrange on a rimmed baking sheet.
- Cut 2 lemons in half and place them on the baking sheet cut side up.
- Roast at 425 for 20 minutes.
- In a small mixing bowl - add miso, sesame oil, garlic, shallots, miso and honey. Mix until smooth, adding a small drizzle of olive oil if it needs to thin out.
- Toss chicken in miso sesame glaze.
- Pull the cabbage out of the oven and place chicken on top. Bake for about 45 minutes or until you reach an internal temperature of 165 degrees.
- Squeeze the lemons over the cabbage and chicken and scatter scallions over the top. Enjoy!
