Roast Chicken with Miso Sesame Glaze and Charred Cabbage

  • 3 pounds chicken thighs and drums (bone in skin on)
  • 2 medium shallots (small diced)
  • 4 cloves of garlic
  • 2.5 tbsp CinSoy Miso
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 1 head cabbage
  • 2 red onions
  • 2 lemons

  1. Salt and pepper your chicken and allow to come to room temperature.
  2. Slice cabbage and red onions onto wedges and arrange on a rimmed baking sheet.
  3. Cut 2 lemons in half and place them on the baking sheet cut side up.
  4. Roast at 425 for 20 minutes.
  5. In a small mixing bowl - add miso, sesame oil, garlic, shallots, miso and honey. Mix until smooth, adding a small drizzle of olive oil if it needs to thin out.
  6. Toss chicken in miso sesame glaze.
  7. Pull the cabbage out of the oven and place chicken on top. Bake for about 45 minutes or until you reach an internal temperature of 165 degrees.
  8. Squeeze the lemons over the cabbage and chicken and scatter scallions over the top. Enjoy!
