Roast Veggie Salad with Miso Mustard Dressing
- 3 tbsp lemon juice
- 3 tbsp CinSoy Miso
- 1 tbsp dijon mustard
- 1 tsp maple syrup
- 1 clove garlic clove
- 1/2 cup olive oil
- Grate the garlic into a small bowl with the mustard, maple syrup, miso and fresh lemon juice.
- Slowly whisk in the olive oil and adjust for seasoning.
- Drizzle over roasted vegetables and enjoy!
