Sesame Soy Cucumber Green Bean Salad

This is the ultimate refreshing dish in the summer heat.

  • 1 tbsp grated ginger
  • 1 clove grated garlic
  • 1 1/2 tbsp CinSoy Small Batch Soy Sauce
  • 1 tbsp Sesame Oil
  • 1 tbsp rice vinegar
  • 1/2 pound green beans
  • 4 Persian cucumbers or 1 large cucumber
  • Toasted sesame seeds

  1. Blanch green beans in salted water and shock in an ice bath. Slice cucumbers.
  2. Grate ginger and garlic into a mixing bowl with the CinSoy Small Batch Soy Sauce and rice vinegar. Whisk in the sesame oil.
  3. Drizzle over your vegetables and allow to sit for 10-15 minutes before serving.
  4. Garnish with sesame seeds and enjoy chilled.
