Soy Chicken and Rice Soup

  • 1 quart chicken stock
  • 4 ounces cooked chicken - diced
  • 4 ounces cooked rice
  • 2/3 cup small diced vegetables (peppers, zucchini, onion, carrots or whatever you need to use up)
  • 3 cloves garlic, grated
  • 1 tbsp grated ginger
  • 1 tbsp CinSoy Tamari
  • 1/4 lemon, juiced
  1. Add the stock to a sauce pot and bring to a boil.
  2. Add in the vegetables and aromatics and reduce to a simmer. Cook until almost tender.
  3. Add in the tamari, cooked chicken and rice. Cook until heated through and finish with a squeeze of lemon. Adjust the seasoning as needed.
  4. Top with fresh scallions, cilantro or a drizzle of chili crisp!
