Soy Glazed Sweet Potato Pancake
- 1 medium Japanese sweet potato
- 4 tbsp potato starch
- 1/4 cup plant milk
- 2 tbsp sugar
- 1 1/2 tbsp CinSoy Soy Sauce
- 1 tbsp mirin
- 2 tbsp sugar
- 1 tsp black sesame seeds
- Peel the potatoes and cube. Boil until fork tender and drain. Mash with a potato masher or fork until mostly smooth.
- Add in your milk, sugar and potato starch and mix until you have a dough-like consistency - but do not overmix.
- Scoop heaping tablespoons of dough and roll into a ball. Flatten with your palms. Heat a pan with oil and cook the pancakes for about 3 or 4 minutes per side, until they are golden brown.
- Mix the sauce ingredients in a bowl. When the pancakes are done on both sides, pour in the sauce and let reduce to a sticky glaze. Flip the pancakes to make sure the sauce coats both sides.
- Serve as a nice sweet treat!
