Soy Glazed Sweet Potato Pancake

  • 1 medium Japanese sweet potato 
  • 4 tbsp potato starch 
  • 1/4 cup plant milk
  • 2 tbsp sugar 
  • 1 1/2 tbsp CinSoy Soy Sauce 
  • 1 tbsp mirin
  • 2 tbsp sugar
  • 1 tsp black sesame seeds 

 

  1. Peel the potatoes and cube. Boil until fork tender and drain. Mash with a potato masher or fork until mostly smooth.
  2. Add in your milk, sugar and potato starch and mix until you have a dough-like consistency - but do not overmix.
  3. Scoop heaping tablespoons of dough and roll into a ball. Flatten with your palms. Heat a pan with oil and cook the pancakes for about 3 or 4 minutes per side, until they are golden brown. 
  4. Mix the sauce ingredients in a bowl. When the pancakes are done on both sides, pour in the sauce and let reduce to a sticky glaze. Flip the pancakes to make sure the sauce coats both sides.
  5. Serve as a nice sweet treat!
