Soy Lime Carrot Noodles
- 1 tbsp peanut butter
- 1 tbsp soy sauce
- 1/2 lime juiced
- 1 clove garlic, minced or grated
- 1 tsp rice vinegar
- 2 tsp sesame oil
- 1 tbsp water
- 4 large carrots
- 1 tsp sesame seeds
- 2 green onions, sliced
- Put the first 7 ingredients in a bowl and mix into a smooth sauce.
- Peel carrots into ribbons with a vegetable peeler.
- Pour sauce over the noodles and mix.
- Serve topped with the sesame seeds and green onions. Enjoy as a light and bright side dish.
