Soy Lime Carrot Noodles

 

 

  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1/2 lime juiced
  • 1 clove garlic, minced or grated
  • 1 tsp rice vinegar 
  • 2 tsp sesame oil 
  • 1 tbsp water
  • 4 large carrots
  • 1 tsp sesame seeds 
  • 2 green onions, sliced

 

  1. Put the first 7 ingredients in a bowl and mix into a smooth sauce.
  2. Peel carrots into ribbons with a vegetable peeler.
  3. Pour sauce over the noodles and mix.
  4. Serve topped with the sesame seeds and green onions. Enjoy as a light and bright side dish.
