Soy Marinated Avocado Rice Bowl

  • 1/3 cup CinSoy Soy Sauce
  • 1 tbsp sugar
  • 4 scallions - sliced
  • 1 lemon - juiced
  • 4 cloves garlic - minced
  • 2 tbsp fish sauce
  • 1 serrano pepper - sliced
  • 1 tbsp toasted sesame seeds
  • 2 small or 1 large avocado 
  • 5 radishes - quartered

 

To serve:

Fried egg, rice, sesame seeds 

 

  1. Mix together the marinade - soy sauce, sugar, lemon juice, garlic, scallion, fish sauce, sesame and Serrano pepper. 
  2. Cut your avocado into large chunks and the radishes into quarters. Add them to the marinade - making sure that they are submerged in the liquid.
  3. Marinate for about 2 hours. 
  4. Scoop out the vegetables and serve over rice. Top the bowl with a fried egg that has been seasoned with Soy Sauce Salt and some sesame seeds. Enjoy!
