Soy Sauce Refrigerator Pickles

  • 8 ounces Soy Sauce or Tamari
  • 4 ounces rice vinegar  
  • 1 tbsp sugar
  • 2 cloves garlic - smashed
  • 4-6 Persian cucumbers
  1. Wash your cucumbers and slice into 1/4 inch thick rounds. 
  2. Add the soy sauce, vinegar, sugar and garlic into a jar. Stir to combine. 
  3. Pour the liquid over the cucumbers.
  4. Refrigerate overnight and enjoy!
