Sweet and Sour Braised Eggplant
- 3 small eggplants
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 chili pepper thinly sliced (adjust for spice preference)
- 2.5 tbsp CinSoy Soy Sauce
- 2 tbsp rice vinegar
- 1 tbsp sugar
- 1/4 cup water
- Handful of basil
- Sear eggplant on medium heat until browned on the cut side.
- Mix liquids together in a bowl and stir to help dissolved sugar.
- Flip, lower heat and add ginger, chili and garlic. Cook for about 30 seconds.
- Add liquids and stir.
- Braise for 3-5 minutes or until sauce thickens and eggplant is tender. Toss in fresh basil and enjoy!
