Sweet and Sour Braised Eggplant

  • 3 small eggplants 
  • 3 cloves garlic, minced 
  • 1 tbsp ginger, minced 
  • 1 chili pepper thinly sliced (adjust for spice preference)
  • 2.5 tbsp CinSoy Soy Sauce 
  • 2 tbsp rice vinegar 
  • 1 tbsp sugar 
  • 1/4 cup water 
  • Handful of basil 

  1. Sear eggplant on medium heat until browned on the cut side. 
  2. Mix liquids together in a bowl and stir to help dissolved sugar.
  3. Flip, lower heat and add ginger, chili and garlic. Cook for about 30 seconds.
  4. Add liquids and stir.
  5. Braise for 3-5 minutes or until sauce thickens and eggplant is tender. Toss in fresh basil and enjoy!
