Sweet and Spicy Glazed Tofu
- 1 block CinSoy Firm Tofu
- 1 small red bell pepper (cut into bite sized pieces)
- 5 scallions (whites cut into 1/2 inch pieces)
- 2 1/2 tbsp That Dam Jam Pineapple Jalapeño Jam (or other pepper jam)
- 1 1/2 tbsp CinSoy Soy Sauce
- Cut tofu in large cubes. Sear in a hot pan until crisped and golden brown on one side.
- Flip the tofu and add the peppers and scallions.
- Cook until browned and crispy on the second side.
- Mix the jam and soy sauce together in a bowl.
- Reduce the heat in the pan and pour over the glaze. Stir and allow the glaze to cook for 1-2 minutes and coat the tofu and vegetables.
- Serve over rice and enjoy!
