Tofu Caprese Sandwich
- 1 block Extra Firm Tofu
- 1 tbsp balsamic vinegar
- 2 slices of tomato
- Soy Sauce Salt and black pepper to taste
- Sourdough bread
- 1 tbsp Miso Pesto ( find the recipe here-> https://www.cinsoyfoods.com/blogs/recipes/tofu-gnocchi-with-miso-pesto )
- Slice the tofu into planks and cook over medium high heat in a pan. Cook until crisp on both sides - about 5 minutes per side.
- Remove from heat and brush with balsamic vinegar when finished cooking.
- Season the sliced tomatoes with pepper and Soy Sauce Salt.
- Spread the Miso Pesto on the bread and layer the tomatoes and tofu on top. Enjoy!
