Umami Mushroom Gravy
- 1/4 c oil
- 1/4 c butter
- 1 large shallot - minced
- 2 cloves garlic
- 4 ounces mushrooms - sliced
- 1/2 cup flour
- 4 cup stock
- 1 tbsp CInSoy Soy Sauce
- 1 sprig of thyme
- Saute mushrooms, shallot and garlic in oil. Cook on medium until the onions have softened and mushrooms have released water and started to brown.
- Add in the butter (use plant based butter if you want to keep it vegan!) and allow to melt. Whisk in the flour - you will be left with a thick roux.
- Cook for 1-2 minutes.
- Add in the stock 1 cup at a time - whisking to combine.
- Add in your soy sauce and thyme.
- Bring to a boil and then reduce heat to low. Simmer for about 10 minutes. Adjust for seasoning.
- Serve with all of your Thanksgiving dishes. Enjoy!
