Umami Mushroom Gravy

  • 1/4 c oil
  • 1/4 c butter
  • 1 large shallot - minced
  • 2 cloves garlic
  • 4 ounces mushrooms - sliced
  • 1/2 cup flour
  • 4 cup  stock
  • 1 tbsp CInSoy Soy Sauce
  • 1 sprig of thyme
  1. Saute mushrooms, shallot and garlic in oil. Cook on medium until the onions have softened and mushrooms have released water and started to brown. 
  2. Add in the butter (use plant based butter if you want to keep it vegan!) and allow to melt. Whisk in the flour - you will be left with a thick roux. 
  3. Cook for 1-2 minutes. 
  4. Add in the stock 1 cup at a time - whisking to combine. 
  5. Add in your soy sauce and thyme.
  6. Bring to a boil and then reduce heat to low. Simmer for about 10 minutes. Adjust for seasoning. 
  7. Serve with all of your Thanksgiving dishes. Enjoy!
