Zucchini with Soy Shallot Glaze
- 2 zucchini
- 2 tbsp olive oil
- 1 medium shallot, small dice
- 1 clove garlic, grated or minced
- 2 tbsp CinSoy Soy Sauce
- 1 tsp sugar
- 1 tbsp sesame seeds
- Cut the zucchini in half lengthwise. Using a paring knife, score the cut sides into a crosshatch pattern, being careful not to cut all the way through.
- Sear in a hot pan with 1 tbsp of oil. Cook on medium high for about 2-4 minutes or until some browning starts to occur.
- Place the pan into a 450 degree oven and continue to cook - cut sides down - for another 5-7 minutes or until the zucchini is tender and golden brown on the cut side.
- In a small pan, saute the shallot and grated garlic until tender. Remove from heat and add in the soy sauce and sugar - they should reduce down with the residual heat. Stir to combine.
- Remove your zucchini from the oven, flip and top with the shallot mixture.
- Top with a sprinkle of sesame seeds and place back in the oven for 2 more minutes.
- Serve and enjoy!
